In the sunlit foothills of Mont Canigou in South West France, Perrine and Étienne Schaller cultivate one of the most extraordinary citrus orchards in the world — a living collection of hundreds of rare varieties, many introduced to Europe for the very first time. Trained agronomists and custodians of this unique heritage, they hand-select six of these exceptional fruits for Castle Freke Gin. From cédrat to kabosu, each citrus is grown with meticulous care and harvested only at perfect ripeness to reveal its purest expression.
Developed using a proprietary 50-step process and long maturation, this recipe has been mastered over a decade of experimentation in the pursuit of perfection. Castle Freke Gin is distilled in very small batches with rare organic and wild-gathered botanicals sourced from across the world.
