The citrus component is an essential element of a well balanced gin, but typically is addressed by throwing in some lemon peel of nondescript origin. Yet there is an almost infinite variety of citrus species and their quality, offering boundless opportunities to create unique citrus contributions to the overall palette presentation of the spirit.

Working with Agrumes Schaller, we have created a gin that bridges Ireland’s rugged Atlantic coastline with the sun-drenched citrus groves of southern France.

At the centre of this collaboration is the remarkable story of Agrumes Schaller. Located in the village of Eus in the Pyrénées-Orientales — one of France’s most sun-drenched corners, at the foot of Mont Canigou near the Mediterranean coast — the estate is internationally recognised for cultivating rare and heritage citrus fruits. Today, the orchards are managed by Perrine and Étienne Schaller, agricultural engineers who have developed the domain into one of Europe’s most celebrated citrus estates, home to hundreds of rare and heritage varieties across 10,000 trees, certified organic and cultivated with an unwavering commitment to biodiversity and exceptional flavour.

Rather than focusing on large-scale commercial production, Agrumes Schaller specialises in preserving citrus varieties that have largely disappeared from modern agriculture. Its orchards contain an extraordinary collection of fruits including cedrat, yuzu, bergamot, finger lime, Buddha’s hand, and numerous heritage lemon and orange varieties. This dedication has established the estate as Europe’s leading specialist citrus producer, supplying an exceptional community of Michelin-starred chefs across eight countries, including dozens of three-starred and World’s 50 Best restaurants among the most celebrated in the world.

The domain’s roots lie in a pioneering vision for citrus diversity, one that traces back to a now-legendary phone call: one of France’s most celebrated chefs seeking bergamots of exceptional quality. From that single request grew one of Europe’s most important citrus collections, built around preserving diversity and championing flavour above all else. Under the Schallers’ stewardship, this vision has been carried further still — extending the collection, deepening the agronomic expertise, and forging relationships with the world’s finest kitchens and food artisans.

Agrumes Schaller’s fruits are harvested at peak maturity from certified organic groves to capture their full aromatic complexity. In many respects, the estate operates more like a fine vineyard than a traditional fruit farm, with each variety reflecting the characteristics of its Mediterranean environment.
